Tacos
Tacos

Tacos are thought to come from Mexico, long before the Spanish arrived.

  1. Cook your choice of protein with taco seasoning in a skillet until browned and cooked through.
  2. Warm taco shells in the oven or microwave according to package instructions.
  3. Prepare your favorite toppings, such as shredded lettuce, diced tomatoes, sliced avocado, grated cheese, chopped onions, cilantro, and salsa.
  4. Assemble tacos by filling each shell with the cooked protein and desired toppings.
  5. Squeeze fresh lime juice over the tacos for extra flavor, if desired.
  6. Serve immediately and enjoy your delicious tacos!

Archaeologists believe that central Asia is most likely the first area to have produced noodles thousands of years ago. From Asia, it traveled westward. The way it reached Europe is unclear, though there are many theories

  1. Boil water in a large pot and add salt.
  2. Add pasta to the boiling water and cook according to package instructions until al dente.
  3. While pasta is cooking, prepare your choice of sauce in a separate pan.
  4. Drain cooked pasta and return it to the pot.Pour the prepared sauce over the pasta and toss until evenly coated.
  5. Serve hot, optionally garnished with grated cheese, fresh herbs, or crushed red pepper flakes.
  6. Enjoy your tasty pasta dish!

Chicken Chow Mein

Chow mein is a dish of Chinese stir-fried noodles with vegetables and sometimes meat or tofu. Over the centuries, variations of chǎomiàn were developed in many regions of China; there are several methods of frying the noodles and a range of toppings can be used.

  1. For sauce: Mix together cornflour and soy sauce, then mix in remaining ingredients.
  2. Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  3. Noodles: Prepare the noodles according to the packet instructions, then drain.
  4. Cooking: Heat oil in wok or large fry pan over high heat.
  5. Add garlic and stir fry for 10 seconds or until it starts to turn golden. Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw. Add the cabbage, carrot, and the white pieces of shallots
  6. Stir fry for 1 1/2 minutes until the cabbage is mostly wilted. Add the noodles, sauce, water Stir fry for 1 minute, tossing constantly. Add bean sprouts and remaining shallots/scallions. Toss through until the bean sprouts start to wilt.
  7. Serve immediately!
Pupusa
Pupusa

Pupusas are the beloved national dish of El Salvador, believed to originate with the Indigenous Pipil tribe over 2,000 years ago. During the 1980s civil war in El Salvador, many El Salvadorans fled the country, bringing pupusas all over the globe.

  1. For side salad: In a bowl, toss together the cabbage, carrots and Mexican oregano. In a measuring cup, stir together the hot water, vinegar, salt and sugar; pour it over the cabbage/carrot mixture. Then refrigerate
  2. For the main part: whisk together the masa harina and salt. Pour in the cold water and using a spatula and stir the masa until mostly combined. Using your hands, mix the dough until a very soft dough forms. Scoop out the masa into balls onto a piece of parchment. Add water to measuring cup and pour in oil (you can eyeball this). Lightly dip your hands in the water/oil mixture, making sure your palm are evenly coated. This will make it so the masa doesn’t stick to your hands.
  3. Preheat your oven to 200 degrees F. place the pupusas in the oven while you make the rest of the pupusas so they can stay warm and melty.
  4. One at a time, flatten the balls gently until they're about 1/2-inch thick discs. Place a tablespoon or two of mozzarella cheese, a small bit of diced jalapeño and squash into the center and wrap the dough around the filling creating a half moon shape. Pinch the edges to seal it completely. And then pat the dough gently, flattening it and alternating hands until it reaches about 1/4-inch thick and about 4-inches in diameter.
  5. Preheat a cast iron skillet over medium heat. Add a teaspoon of oil and brush the surface with a brush. Add the pupusas to the pan, fitting two to three at time. Cook each pupusa for 4 to 6 minutes per side and then transfer to the baking sheet in the oven.
  6. Serve with salad on top or on the side!
